After eight years leading Toronto’s Canoe — one of Canada’s most celebrated dining rooms — he now travels and collaborates across North America. His ingredient-driven cooking celebrates Canada’s diverse landscapes, with the belief that old-school techniques should, and always will, remain at the forefront of his style.
